Rose Ann Mathai began teaching at ÖØ¿ÚζSM in the Fall 2012. She received B.S. from Miami University in Health and Human Studies with a concentration on Nutrition and Dietetics. Following her degree, she completed a Dietetic Internship from Virginia Commonwealth University in Richmond, VA. Dr Mathai worked as a pediatric clinical dietitian at the Children’s Hospital of Philadelphia in Philadelphia, PA. She then transitioned to graduate school at the University of Illinois Urbana-Champaign Division of Nutritional Sciences where she earned a M.S. and PhD in Nutrition focused on pediatric nutrition. While working on her graduate degree, Dr Mathai worked as a student intern for Abbott Nutrition in the Nutrition Regulatory Affairs Division and part time adjunct instructor at Parkland College in Champaign, IL. Her current research focuses on the development of interprofessional education (IPE) among Nutrition, Nursing, Social work and Physician Assistant Studies students. Her research examines the effect of an IPE simulation on changing student attitudes in the areas of teamwork, roles and responsibilities, patient centeredness, interprofessional biases, diversity and ethics, and community centeredness.
